NEW RUNNER shock freezers are designed for restaurants, pastry shops and other enterprises working with raw products. Universal guides allow you to place both GN containers and pastry pans 60x40 and 60x80 cm. The operation of shock freezing chambers is divided into three phases: the products are cooled, frozen, and then finally frozen. In the first phase, the product temperature drops to 0 °, in the second, the product overcomes the so–called cryoscopic point, almost all moisture turns into ice, in the third phase, the product is cooled to -18 ° C. Cooling from +90°C to +3°C in just 90 minutes, and freezing from +90°C to -18°C in just 240 minutes.
